I just bought nutritional yeast for the first time last week and put it on some whole wheat pasta and garbanzo beans, mixed it all with some whole tomatoes and olive oil= total deliciousness! Does any one have any other recipes that use nutritional yeast they wanna share?
Nice! I've seen the vegan lunchbox, but don't have it! I know the author has a great blog with some recipes. Vegan Dad is a good one too.... so many blogs and recipes, so little time :) glad you've found some good ones.
2 cups vegetable stock
1/3 cup pine nuts
3 Tblsp. olive oil, divided
1/2 cup onion, finely diced
1 1/2 Tblsp. garlic, minced
1 winter squash
3 Tblsp. fresh sage or 1 Tblsp. dry sage
3 cups cooked Arborio rice or Brown Basmati
1/2 cup white wine (Chardonnay)
3 Tblsp. Bragg Liquid Aminos or tamari
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
1/4 cup Nutritional Yeast
2 Tblsp. freshly chopped parsley or 1 Tblsp. dry parsley
1 can black beans drained and rinsed (optional)
1 container of sliced mushrooms, chopped (optional)
Cut squash in half and remove seeds. On baking greased baking sheet place halves face down and bake on 375 degrees for 45 minutes until tender. When cool spoon out squash and set aside.
In a large saucepan, place the pine nuts and olive oil, and cook over low heat for 2-3 minutes or until pine nuts are lightly browned. Using a slotted spoon, remove the pine nuts from the olive oil, place them in a small bowl, and set aside. In the hot olive oil, saute the onion, mushrooms, and garlic for 3-4 minutes or until soft. Add the winter squash and sage, and saute for 3 minutes or until the sage is fragrant. Add vegetable stock to the saucepan.
Checked out the website and its great! Im thinking about buying the book, "The Vegan Lunchbox", it looks like a good one. I have found that I really like putting nutritional yeast on whole ground yellow corn grits, it tasts like cheesy grits, yum! which is great b/c I am from the south
There are lots of recipes with it in Vegan cookbooks! try theppk.com (lots of vegan "nooch" recipes), and I think there is even a nutritional yeast cookbook on the market! I put it on salads and popcorn :)
