In The Vega Kitchen: Chocolate Breakfast Bean Brownie

Why not add some Vega to that awesome Black Bean Brownie? But wait, black beans in a brownie, ew!? My first thought, exactly. Why don't you do a quick Google search for "awesome black bean brownie" and you will see... they're beyond popular! It's because black bean brownies are one of those healthy spins on a classic recipe (the kind you devoured growing up), that not only tastes just as heavenly, but with the added nutritional bonus (minus the refined flour, sugars etc.) is better than the original!

 

 

As Peggy explains in her book, Must Have Been Something I Ate you can create a big impact on your health by incorporating small (yet delicious) changes to your meals or snacks overtime. So what are you waiting for? Here's what you need...

 

1 serving Chocolate Vega Whole Food Health Optimizer

15 ounces Black Beans, drained and rinsed
2 Bananas, ripened and mashed
¼ CUP Unsweetened Cocoa
1 TSP Cinnamon
1/4 TSP Salt
1 TSP Vanilla Extract
¼ CUP Rolled Oats
1/3 – 1/2 CUP Hemp Milk (or preferred milk alternative)
1/3 CUP Agave Nectar (optional)

 

  1. Pre-heat oven to 350 f.
  2. Blend oats until they become a fine powder.
  3. Add all remaining ingredients. Pour mixture into tray and bake for 35 minutes.
  4. Let cool for 5-10 minutes. Serve with fresh fruit compote and garnish with frozen blueberries.

I made these, I followed the instructions to a T, and I'm sorry to say, they were nasty. The top got brown, almost burnt looking, while the inside stayed uncooked. I'm wondering if the amount of oat flour was wrong? I ground the oats in my VitaMix, then added all the rest of the ingredients and blended til smooth. I really wanted these to work, but I had to throw them out cuz I really expected them to turn out like a brownie, not a raw half baked brownie batter. If that's what it's supposed to be like, I wish it would be stated in the recipe. I'd love to know if anyone else has made these and how they turned out.

I made these tonight - delicious!  Unfortunately we can't get Vega in NZ so I substituted protein powder and some red berry powder....made fruit salad even better!
