Besides being definitely green this salad is alkalizing, great for the thyroid and loaded with
antioxidants, vitamins and is mineral rich. After eating the Go Green Salad
you’ll feel alive with energy and your body will thank you along with your
taste buds. The dried Wakame gives this salad a crunchy texture.
If you’ve never tried Arugula in your salad this is a spicy little leaf, which some describe as bitter and
others characterize as having a "peppery-mustardy" flavor will add a
new flavour dimension to your salads. Perhaps
you know it by some of its other names — rugola, rucola, roquette, garden
rocket, Mediterranean rocket, salad rocket, Roman rocket, or Italian cress.
The benefits of Wakame are ten fold. Wakame is a thin and stringy seaweed, deep green in color and used in
making seaweed salad and miso soup. Wakame is common in Japanese and other
Asian cuisines. Because of its kelp content is rich in protein, calcium,
iodine, high in potassium, magnesium, iron and folate. It is also high in
dietary fiber.
Go Green Salad
Makes 4 Large Servings
½ bag (6 cups) Organic Baby Spinach
½ bag (6 cups) Organic Arugula
2 handfuls (1/2 cup) Dried Wakame Flakes Seaweed Vegetable
2 Tablespoons Mrs. Dash (original blend/no salt added)
½ cup EFA Antioxidant Oil Blend
¼ cup Modena Balsamic Vinegar
In a large salad bowl add greens and Wakame. In a glass jar mix together the oil and vinegar, shake and pour on
green mixture. While tossing, sprinkle Mrs. Dash into the salad. Test taste and
add more oil or vinegar to your liking. Enjoy!
