{EAT} Quick and Dirty Vegan Chocolate Protein Pudding – OMG L.O.V.E.

This afternoon I happened across the most delicious meal quite by accident. Actually, I’m finding that in general, as my streak of bad cooking karma continues, it seems to be a case of trying too hard.

Awesome results in the kitchen is like finding a man. If you try too hard, it usually doesn’t end up well. ~ Confucius (okay, he didn’t say that)


 

So this little recipe is more like an assembly of a few items. It’s so easy to pull together and OMG it’s yummy like crazy.

It ends up being around 350 calories and a whopping 35 grams of protein. Not too shabby!

 

Vegan Chocolate Protein Pudding

Make this the night before and bring it to work for a mid morning meal. Delish.
Ingredients
  • 1 small plain soy yogurt
  • 1 scoop chocolate Vega protein powder
  • 1 tablespoon raw cacao (optional)
  • 1 tablespoon raw honey
  • ½ cup berries
  • ¼ cup coconut milk
Instructions
  1. Mix everything together and use the coconut milk at the end just in case the protein powder makes the mixture a little too dry or chalky. I also added a dash of ground flax seed to crank up the fiber.
