I love these Corn & Bean Tostadas. The recipe was originally published on my blog at: http://jaylyneatsraw.com. I adapted the recipe from one I found in a magazine. These are SO fast, and SO delicious, all my non-vegetarian friends love them! I think they're great, because they're very filling, totally satisfying, and they're so quick and easy to make! I fall back on these a lot when I'm running short of time or ingredients, and I need something to fill me up fast. They've saved me from a far less healthy choice many times!

  • 2 tablespoons lime juice
  • 2-3 scallions, diced
  • 1 package (10 ounces) frozen white or yellow corn kernels
  • 2 tablespoons olive oil
  • Sea Salt & Black Pepper to taste

Mix the above ingredients together in a bowl and set aside.

  • 3 flour tortillas
  • 1 small can Pinto or Black beans, rinsed and drained
  • 1/3 cup garlic-flavored hummus

Lay out each of the above tortillas, and spread each with 1/3 of the hummus. Top with 1/3 of the beans, then warm in a dehydrator or an oven on its lowest setting.

  • 1 1/2 cups Roma or Grape tomatoes, diced
  • 2 cups green leaf lettuce, chopped
  • 1 avocado (optional)

Slice the tomatoes, lettuce and avocados while the tortillas are warming, and the corn is marinating. Once complete, lay each of the tortillas on a plate, top with the marinated corn mixture, sliced roma or grape tomatoes, lettuce, and avocado. Enjoy!
