Vanilla Chai Pumpkin Bars

1 1/2 c pumpkin seeds
2c pumpkin or butternut squash, cut into small pieces
1/2c sunflower seeds
1c dried apricots, quartered
4 scoops vanilla chai Vega whole foods optimizer
2tsp cinnamon
1tsp nutmeg

First, grind pumpkin seeds in food processor to fine pieces. Remove and place in a large mixing bowl.

Second, chop squash/pumpkin in food processor in to fine pieces. (If you would rather, cook the pumpkin first and then add to the food processor.)

Third, grind remaining ingredients until a ball stats to form.

On a baking tray lined with parchment paper or on your dehydrator rack. Spread mixture into pan to desired thickness. You can dehydrate if you like I would suggest 118 for 6-8 hours. Or you can just refrigerate and eat as is!

You can also make them into balls!

Not a silly question at all. Take the pumpkin and with a big sharp knife chop the bottom off so you have an even surface to place on the counter. Next, do the same with the top. If it's a small pumpkin I generall cut it in half and then cut the rough outer shell off (very carefully)! Then take your pumpkin guts (hehe) and cut it into cubes (size doesn't matter). Then put those pieces in the food processor and you're good to go.
