Walnut? Pecan? Does it really matter?

I love to eat pita's stuffed with vegetables for lunch.  Along with the veggies, I usually add a spread such as Vegeniaise or hummus.  But, I was reading through the cookbook Veganomicon (which is fabulous) and I found I recipe that I had to try!

Walnut-Mushroom Pâté

I did have to modify her recipe because of the ingredients that I had in my house.

Begin by heating 2 Tablespoons of the olive oil in a large skillet over medium…

Jicama Salad

With the Vancouver weather getting gray and cold, it seemed like a great opportunity to make something that reminded me of sunny Mexico. Jicama is a sweet root that looks a bit like a turnip but who's flavour has best been described as a cross between a potato and an apple. It isn't as starchy as a potato so works really well raw as you don't get that floury, gritty texture you do from raw potatoes.

Here's my recipe:…

No Bake Brownies

The brownie universe isn’t exactly full of surprises. The combination of sugar, butter, flour, chocolate, eggs, a few extraneous ingredients, plus a little oven time, inevitably leads to some form of brownie action. Of course, the resulting degree of deliciousness is all in the details — just talk to the adamant nut-adders, the chocolate chip enthusiasts, or the “fudgy” versus “cakey” people that can seemingly never agree. Yet, by and… Continue

Mmm.... Delicious Banana Bread Energy Bars

The cinnamon and nutmeg taste combined with banana is oh so good. What a great alternative to traditional banana bread - these bars keep the taste but use nutrient-packed ingredients instead of high-fructose corn syrup, white sugar and hydrogenated oils.

Green Mango Dessert Smoothie

This is a tale of a treat with an identity crisis. Technically, it's a smoothie because it

A) is made in a blender

B) has fruit

C) includes a little nutrient-rich protein powder

D) is kinda an ugly green color (a non-essential but frequent result of smoothie making).

Yet there's something about this blend, with its thick frosty creamy mangos and sweetly inviting flavor that makes it… Continue
