Ken, don't underestimate the change that happens from moving to a Vegan diet. It can take time. I suggest just adding a big salad to one meal a day. The all or nothing approach is likely to fail for someone like you. It does not need to be all or nothing. I eat in the "Thrive Diet" way and train for Ironman at the same time. It is possible but you need to ensure you follow a book like Thrive. It's not just salads and can be really tasty, amazing food. The upside is you can eat a lot and loose weight and be healthier then you have ever been. Good luck.
