Penne With Pesto Sauce and Vegetables
Boil pasta of choice. I prefer penne for this dish.
1. Toast 4T of pine nuts in fry pan @ med. heat @ 45 seconds "til golden.
2. Blend: 1/2c EVOO (Extra Virgin Olive Oil), 4T toasted pine nuts, 2 cloves garlic minced, 1 pkg. vegan pesto sauce.
3. Add: 1/4c vegan Parmesan, 2T vegan Romano. set aside. *Sauce may be frozen.
