June 2012 Thrive Challenge

Inspired by the lifestyle changes recommended in Thrive and Thrive in 30, the Vega Community is here to keep you on track, share in your successes, and inspire even greater change to help you achieve optimal health.

We’d like to say a big thank you to all you Thrive Challengers for sharing your plans for reaching your spring training goal last month. Now that it’s June (already?!),  we hope you’re all a little closer to reaching your spring training goal and that you’ve had some great weather to get outside!

Your Challenge this Month: In the spirit of partaking in activities that get you ENERGIZED, we want you to share your go-to, can’t-leave-the-house-without,  favorite healthy fuel to power your summer adventures.

Superfood Smoothie:

Strawberry or plain organic kefir (for Probiotics)

1 banana

Blueberries or Strawberries

Water or unfiltered (cloudy) apple juice (depending on how sweet I want it to be)

Chia seeds

Maca powder

Chlorella

Spirulina

Barley Grass

Hemp seed Protein

Plain, crossflow, micro-filtered whey protein concentrate (NOT ISOLATE)

Cinnamon

I have a kale shake with Vega protein, chia seeds and fresh fruit almost every morning...Ymmm ;)

I love me some homemade almond muffins or bread: mix ground almonds + egg whites + a little bit of water or milk (goats, soy, almonds whatever you may so choose) + stevia + baking powder until the mixture is quite loose in consistency but still holds. Bake in muffin cups or a small loaf tin at 250 degrees Celsius for 10-15 minutes or until they have a golden brown colour on top and a fork comes out clean. I sometimes spread it with almond butter or just eat plain - they're great for a low carb, high protein fix that will keep you going and going like the Energizer Bunny.

A kale and fruit smoothie is an almost every day thing for me. I also love a smoothie with fresh sweet potato, carrot and apple juice, banana and cinnamon...mmm! If I need a boost in between all my veggies, I of course have a scoop or two of vega or a piece of Ezekiel bread with raw almond butter on it!

Water! Or a Vega smoothie. I also like to pack healthy snacks for work, like dried fruits (dates, apricots, cranberries).

Funfetti Protein Bites

1 cup + 2 Tbs gluten free whole rolled oats, lightly toasted
3 Tbs vanilla cake mix*
1scoop vanilla protein powder
1/4 cup brown rice (or coconut) syrup
1/2 tsp. bourbon vanilla extract*
3 Tbs rainbow sprinkles
2 Tbs mini chocolate chips of choice

LIGHTLY toast the oats and allow to cool completely. Then place all I.ingredients in bowl and stir until well combined. Place bowl in the fridge and chill at least 2 hours. When mixture has stiffened, shape as desired (balls, squares, rugged chunks...). Store in fridge until ready to eat.

Every morning before a long day at grad school I fuel up with oatmeal with a scoop of vanilla chai vega, and 1/2 a banana or blueberries thrown in. Of course I need my coffee with coconut creamer and large lemon water too! It keeps me full till lunch. On the weekends before AM hot yoga I make a green drink to power me through.

A cup of coffee (maybe not so healthy), peanut butter and homemade strawberry jam on half of a plain bagel and I'm out the door. I save the Vega shake for when I get back. :-)

My fav healthy summer adventure fuel is Goji berries mixed with Pumpkin seeds & cacao nibs. Great energy (& even better when it melts a little & sticks together). also pair it with a nice cool coconut water & you're set! Great on hikes or bike rides around the Island!

I drink 8oz of raw coconut water every morning as well as my pre-workout energizer before heading out to the gym at 4:45am and I never, ever, never, ever leave home without my pouches of electrolytes! Usually I take my water with them already mixed in, but I always carry extras in case my days activities extend longer than I've planned. I'm a 100% vega girl. Home and office are stocked with all things Vega :)

I make a smoothie a lot after a work out - but drink it a home - my favorite PORTABLE snack is a cored, sliced APPLE!! Any kind - any time - I eat at least one a day!!! And they are easy to carry!!  My kids love - and I can take peanut or other nut butters with me to dip!! MMMMM!!!!!!

Obviously Vega is the best, and my favorite, way to fuel up in a super healthy way!!! Other than that, quick grap-and-go is dates....LOVE 'EM!  Green Smoothies are also a delicous and hydrating way to fuel a powerful summer day :)

Organic Kamut put in to soak in the solar oven the night before with gojis, crans and raisins. Cooked to perfection by the morning sun. Add rice milk, fresh berries--always blueberries, will be buying three flats to freeze next week: put them in a single flat layer in a plastic bag and lay in the freezer: fresh plump berries all winter long--add pumpkin, sunflower and hemp seeds and dust with a freshly ground spice mix of ginger, allspice, cloves, cardamom, cinnamon and nutmeg.

My favorite pre-workout can't do without is my super-cali-fragalist-ic smoothy...Kale, spinach, a squeeze of lime,a scoop of flax seeds, a dash of chia seeds,a banana, a pink lady apple, some strawberries, some blueberries,a tbsp of almond butter and a 1/2 cup of green tea blended until smooth...it gets me all pumped up for my Crossfit class :)

Kale Smoothies! I eat them constantly and feel slightly high every time. I've got my roommates hooked too. They're the best, quick meal I can imagine.

I second the lemon juice and water mix! I try to always carry a 32-oz. container of it throughout the day after drinking a glass or two in the morning.

I get up at 4:45 AM and have my lemon juice and water then head to gym with my preworkout energizer (love the lime flavor) After the gym I have a glass of juiced vegies, and before I leave the house for work I make sure I have one  my vega smoothie mixtures and fruit in hand. My day couldnt be more complete with a start like this.

Baggie o' mixed nuts that I make myself. Easy, quick, doesn't spoil and I can change my mixture based on what I'm craving (salty or salty & sweet with some veg'n chocolate chips added in: Those with Walnuts are just ridiculous! MMMmmm!)

I pop one a homemade raw protein bar into my purse every day - perfect way to stay fueled up as a busy Mama of 2 young girls. Lots of superfood goodness in this bar and my 3 yr old loves them! 

  • ripe banana mashed {or 4 dates pureed with water to make paste)
  • 2 tbsp Coconut oil melt in micro for 10 sec
  • 1/4 c Maple Syrup
  • 1/2 c Peanut Butter (or any nut butter i.e. almond, pecan, cashew, etc.)
  • 1.5 c Oats {or quinoa flakes or ground buckwheat)
  • 1/2 c Shredded Coconut
  • 1/2 c Raisins (or goji berries, date chunks, cranberries, craisins, dried cherries/mangoes/apricots/etc. Any dried
  • 1/2 c Chocolate Chips & Cacao nibs mixed
  • 4 scoops Vega Protein Powder 
  • 2 Tbsp Flax Seeds
  • 2 Tbsp Chia Seeds
  • 1.5 Tsp Cinnamon
  • 1 Tsp Vanilla Extract

Mix all together & freeze!
