Vegan Triathletes, I would love to know everyone's staple foods and nutritional ideas. Do you guys watch your fiber intake at all? I am still working through the kinks of diet and training, but would like to do a full iron this summer. Please share anything and everything vegan and triathlon!!!

Ironman US Championship NYC (actually NJ) in August
Oliver 70.3 June 3rd with the husband, maybe the Rev3 70.3 in Portland July 8th. Husband is doing Ironman Canada August 26th so I will be the sherpa.
Looking forward to getting back in to it... took a year off last year as my mom was ill and had to deal with that as well as getting married. All is well and back to racing (well, participating).
As for watching fiber, I don't. I figure I get enough in my diet between my green smoothies every morning, sometimes with Vega smoothie infusion or shake n go added... staples: BB'S garlic oregano yam fries with a raw chipotle mayo (made from cashews - out of this world and thanks be to the man for making a vita-mix); smoothies; carrot-ginger soup; raw cacao macaroons... brown rice with steamed cauliflower and miso gravy; roasted cauli with lemon juice; so many things! Sorry for rambling on but I love food.
