Hey all,

Just thought I would start a discussion about everyone's favorite Vegan Thanksgiving recipes.

I love Brussel Sprouts roasted with a salt and pepper dressed lightly with a balsamic vinegar mustard mix! So simple and yummy as a hearty side dish. Add some lightly toasted or raw hazelnuts to add sone crunch, protein, and fat!

Oh man,

Just saw this Seth. I live in Socal and this is heaven for Vegans. Almost all restaurants worth going to have a Vegan or serious vegetarian menu on hand for us types. Even the wait staff and hostesses know what a vegan is and that a vegan does not eat fish either!

My wife and I did a Vegan beef wellington (seitan protein) with a shitake mushroom gravy, mashed sweet potato with brandy and pecans, brussel sprouts...out of this world.

I made myself a stuffed acorn squash that was pretty awesome. It included brown rice, cannelloni beans, diced celery, sauteed mushrooms (great quality olive oil) and some diced red peppers, all roasted inside of a halved acorn squash. Oh and it was topped with a mushroom gravy bought from Whole Foods. I also made Glazed carrots, which was some autumn spices mixed with maple syrup/water and boiled until carrots were tender. In addition I made a small salad (roamine, kale, spinnach, onion, red pepper, grapes) and crafted a maple mustard vinaigrette dressing that was excellent. Definitely more food than necessary, but delicious none-the-less : )
