Thanks for consulting the community about this! Although I have never traveled to Cuba, you may want to take a look at the 12-Week Whole Foods Meal Plan in Brendan Brazier's, Thrive Diet. I am sure someone at your resort would be able to recommend a local market.
Has anyone been to Cuba and have tips for Caroline?

I stayed in Havana in '09 and I have to tell you, they don't have a lot of vegetables. Citrus fruits galore! and Fish and seafood also. Unfortunately their staple is rice, beans, and pork and not much else to choose from. Things may have changed now that ordinary cubans can grow their own food legally, which presumably means that they would have been provided with seeds but I doubt that you will find anything in the markets outside the resorts yet. Your best bet is to have a chat with one of the chefs or someone working in the kitchen, especially if you have food allergies (as I do). I recommend that you take with you protein bars, nuts and seeds, dried fruits, shakes: generally what you would pack for a camping trip, i.e. dry food that you can take to the beach with you. If you are a vegetarian but you part take in fish, its always fresh and very well prepared.
