does anyone have some delicious christmas recipes. I am the only vegan in my family and need some delicious recipes that my family will enjoy as well. They are just starting to enjoy some of the yummy plant base foods available and I'd love to keep the momentum going who knows one day my whole family will join me
Yum! I make something similar to this but with cabbage. I like the idea of swiss chard leaves better. I will have to try it like that next time. I stuff mine with brown rice, wild rice, mushrooms, walnuts, and raisins.

Pam - the dishes you just shared look great! As far as Christmas baking goes, I was just thinking that these Coconut Quinoa cookies by Zennia would be an excellent choice! (As tasty as gingerbread or fudge but full of nutrition... I love it!)
I don't know the exact measurements I just add stuff in a blender and see what happens and then adjust it. Also soak the raisins and they blend up smoother.
Hey Naomi! I totally understand this! I'm planning a couple dishes to take to my family's christmas too. There are a few good ones that I've found replicate more traditional recipes. In "The Joy of Vegan Baking" there is a fantastic, and totally simple cornbread recipe that everyone loves. Stuffing can easily be made vegan, which is great. And for Thanksgiving, I usually make a tofurkey with roasted veggies, though not every family is up for that! We usually eat a lot of the same things for Thanksgiving and Christmas, so I don't differentiate much! :) You might want to check out the Thanksgiving recipes by Robin Robertson... they look great and could work for Xmas.
