I will often have a chopped apple topped with 1 Tbsp of salba/chia, 1Tbsp goji berries and some cinnamon - yum! I also make a big batch of pudding once a week so it's ready to go whenever I need a quick snack. Erin's puddings sound like great snacks. I actually love having nut milk with fresh fruit as a snack too, sometimes with shredded coconut and nuts added in. Raw vegan oat yogurt with olive oil is also a great snack.
